Pinot Noir harvested in 2023 was aged in barrels for 11 months. The tank was cooled to 3°C for 5 days from the start of preparation to extract pigments. Then, natural fermentation was allowed as the temperature gradually rose. The maceration period lasted one month. The 2023 Pinot Noir has a softer taste compared to 2022.
Aroma of cedar, black tea, and ripe berries.
Tannins and fruit flavors slowly spread in the mouth, centered on acidity.
And the color of the wine is a beautiful brick color, as if it had been aged for a long time.
