Regular Price ¥3,850This is a special Pinot Noir named after Chie Sakata, the head winemaker at Bernhard Koch. When visiting the winery in March 2023, the 100% barrel-aged Pinot Noir we tasted was so wonderful that it was decided to bottle it exclusively for the Japanese market.
Not only tasting locally, but also by asking Mr. Sakata, multiple samples with adjusted new barrel ratios and flavors were prepared, and after repeated tastings, we finally bottled a cuvée that we could be satisfied with, saying "This is it!" Compared to the standard class "Fon Les (KA-610)", you can feel a rich fruitiness along with complexity and a pleasant aroma from the barrels.
Grapes from vineyards in the three villages of Heinfeld, Fremlingen, and Godramstein are used. The soil consists of variegated sandstone and limestone. The training system is cordon with a planting density of 5,000 vines/ha and a yield of 45 hL/ha. Harvesting is done by handpicking while selecting in the vineyard.
The grapes, which are 100% destemmed, undergo cold maceration at 6 degrees for 4 days before alcoholic fermentation. After that, fermentation is carried out in stainless steel tanks with temperature control averaging 28 degrees. Aging is done for about 18 months in French oak barrels (5% new barrels). Neither fining nor filtration is performed. Compared to "Fon Les", you can feel a rich fruitiness along with complexity and a pleasant aroma from the barrels.
