Made with Steuben and Berry A from Yamagata Prefecture. The grapes were destemmed and crushed at the end of October, and fermentation was carried out for about 60 days until Christmas in December, with almost no stirring. This wine, which continued to ferment gently during the cold season, has become a delightful wine filled with a lovely berry berry berry aroma due to moderate resting to avoid oxidation. Previously, the concept of this wine was named "Tsundere" for a reason, but this time the wine might be "Dere Dere without Tsun." Since this wine took time to ferment, even after opening, you can enjoy the deep flavor of the wine itself, even if the gas in the bottle decreases. It is a two-stage delicious wine that allows you to enjoy the liveliness at the time of opening and the umami of the wine itself after opening. The name "Pump up" was given because it means to burst and also signifies enthusiasm and excitement. I hope this wine brings you some joy and helps you move forward. Additionally, the "cats" were drawn by Emi, representing our three cats.
This time, this wine may have a slightly stronger bottle fermentation gas, so please chill it well and open it quietly to enjoy.
