Are you familiar with the grape called "Hokujun"? Also known as Muscat Hamburg Amurensis, it is a very vigorous variety, and its grape leaves are often larger than a human face. This Hokujun was fermented and barrel-aged. When you think of wild grapes, you might imagine a very strong acidity, but since the harvest was extended to full ripeness in late October, the acidity is not as strong as you might expect.
By blending whole-cluster fermented Muscat Bailey A with Hokujun, you can enjoy the sweet aroma derived from Bailey A in the glass. The color is very vivid, and although you might expect a rich flavor, it actually has a refreshing taste. With acidity reminiscent of perilla and a faintly sweet aroma, it finishes with a light flavor. Please enjoy the long-awaited field blend from winemaker Yosuke Akiba and Chim Dream Winery.
