Made from Merlot in the Okitama region of Yamagata Prefecture. To reduce the intensity reminiscent of the hot summer of 2023, the destemmed and crushed grapes were cold fermented for 60 days with minimal stirring, using the cap inside the tank to block air in this MC wine. This method gives the wine more body than typical sealed MC wines, and also produces more "aroma" and "gentleness" than usual fermentation. We wanted to express a smooth and easy-drinking wine from the hot 2023 Yamagata Merlot, so we made it using this method. You can sense a slight "pyrazine (green aroma)", but the smooth, juicy character dominates, making it a versatile wine for various occasions. Malolactic fermentation (MLF) has been fully carried out, so you can enjoy a more complex and pleasant finish. Although the production volume is small, please enjoy this "plain Merlot" as you would "plain udon" or "plain soba".
