Using Koshu from Hayama in Makioka Town, Yamanashi Prefecture, and Koshu from our own vineyard in Katsunuma Town. Only grapes with good coloration were selected, fermented with maceration for about two weeks, then pressed and aged in barrels for about six and a half months.
Complex aromas of pear, quince, violet, and marguerite spread. The fruity acidity and rounded pleasant astringency give the flavor a three-dimensional feel, and the rich umami that gradually spreads lingers long in the aftertaste.
