The grape's character lies in its floral aroma and acidity. Although it is originally a variety with a floral scent, the Campbell from Takehara feels more floral compared to those from other regions. The reason, according to local growers, is "because the seawater seeps into the ground, creating a stressful cultivation environment, the grapes themselves try to strengthen their vitality."
Since the cultivation area is not in the mountainous region, there is not much temperature difference between morning and evening. Nevertheless, the acidity stands out. This is due to the inherent characteristics of the grape variety as well as the timing of the harvest. The secondary fermentation in the bottle enhances the distinctive aroma of this sparkling wine with a stronger pressure to the fullest.
