Selected Chardonnay from our own vineyard, harvested in 2022.
Using the clear, high-acidity juice from the top layer, primary fermentation was done in stainless steel tanks, then bottled with yeast and sugar added for aging.
Secondary fermentation and aging in the bottle for over 2 years. At disgorging, wine from Chardonnay that underwent the same secondary fermentation in the bottle was added and the cork was inserted.
