Looking back now, the year 2021 was a big vintage in recent years.
The accumulated temperature was higher than usual, and although there was autumn rain, from mid-September to October, the weather was calm with continuous sunshine, allowing the grapes to be watched over with peace of mind.
Pruned in August, leaf removal around the clusters, in September, thinning is done appropriately with a target sugar content of 20 degrees. Then, after ripening for just over a month, harvested in late October. At this point, from about 2,500 kilograms of harvest, only the best grapes are carefully selected for production, which is Rosso. The total amount of Merlot in this block by Mr. Ohno, including thinning, is 3,000 kilograms. Of that, only half, 1,500 kilograms, becomes Rosso.
It is a very precious and noble wine that can only be made from half of the vineyard.
The Merlot at Ohno Farm is about 20 years old. During that time, the vines, matured under Mr. Ohno's devoted care, have grown into wonderful grapes thanks to the time taken and the conditions of the land. Therefore, the winemaking is simple. Strict selection in the vineyard, all grapes with high ripeness are destemmed, during the one-month maceration period, only a few push-downs are done, and the minimum necessary care is taken daily while monitoring. After that, gently, gently pressed, then filled into two large barrels and one barrique, aged for one year before bottling.
This Merlot from Mr. Ohno holds a lot of unique potential and characteristics of the land. Gentle tannins, a soft yet deep fruit flavor, no startling impact, but an endlessly long finish and acidity. It is a very elegant finish that almost reminds one of Pinot Noir. Truly a wine worthy of the flagship name, and among them, it was an outstandingly good year. Released after aging for just over three full years, it is a wine that will continue to evolve even if aged for several more years.
