When the winery opened in 2018, we received support through crowdfunding, and the grapes bore fruit safely. At the local Ueno (Wano) vineyard, eight grape varieties—"Bailey A, Merlot, Bijou Noir, Pinot Noir, Syrah, Albariño, Chardonnay, Mondobrillier"—are cultivated with pesticide-free trellis training.
Pesticide-free cultivation of wine-specific varieties is quite harsh, but finally, in 2022, we were able to harvest. Although we cannot process single varieties, we decided to ferment everything together at low temperature to "taste the vineyard." Slowly and gently to express the "vineyard."
After bottling, the balance between red wine and white wine was not yet harmonized, but it has finally become a "soft" taste that can express the "vineyard."
