Regular price ¥3,520This is a rosé sparkling wine made from a blend of Merlot & Chardonnay.
Merlot and Chardonnay were destemmed and crushed, then cold-macerated for two days. After pressing, fermentation was done with natural yeast, and primary fermentation in the bottle was done using the ancestral method. Bottled at a specific gravity of 1.008 aiming for slight residual sugar. No sulfur dioxide was used until bottling.
Bottled on October 22, 2024, disgorged on February 19, 2025, it has nearly 6 atmospheres of gas pressure, but if you keep it upright and well chilled, it will not gush. (However, please be careful.)
A faintly sweet residual sugar sensation and sharp, fine bubbles, with a slight green and bitter note from the Merlot, come together in a wonderful balance.
Rose, cotton candy, melon, and dill scent it fragrantly, and when you take a sip, the fine bubbles expand elegantly, and the juicy sweetness of the fruit spreads throughout your mouth.
The gorgeous finish and sharp bubbles, with just a slight bitterness, are pleasantly fleeting, making you reach for the glass again and again.
At the time of release, it is slightly reductive when first opened. However, I think it is a positive reduction, not an unpleasant one.
You can enjoy a crisp drinking experience even as it is now while it is still reductive, but if you wait a few months, I believe it will blossom into a wine overflowing with fruit.
