Regular Price ¥3,850This wine is crafted by young winemaker Ryusei Kusano, aiming for a deeply flavorful wine that you savor gradually, rather than an obvious and sharp deliciousness.
In 2023, I made it with my favorite blend and co-fermentation. The grapes are Merlot and Tannat from Hokuto City, Yamanashi Prefecture, and Kerner from Yoichi, Hokkaido.
Destemmed and crushed Merlot and pressed Kerner juice were combined and underwent a shallow 10-day skin contact before pressing, then aged for 8 months in old barrels. Natural yeast, unfiltered, and no added sulfur dioxide at both fermentation and bottling.
Grapefruit and muscat from Kerner, bonito broth from Tannat, and the refreshing fruitiness of Merlot spread in layered complexity.
kisui (きすい) is named after brackish water in estuaries. It refers to the narrow area where freshwater and seawater mix between rivers and the sea.
By blending and co-fermenting the grapes, the varietal characteristics become subtle, resulting in a wine that is gently delicious and makes you want to take another sip.
