Kirinoka / Pegasus Hills Merlot / Cabernet Sauvignon Cuvée Tobi 2024 (Red) 750ml
Regular price ¥5,500The reason Nagano Prefecture is considered suitable for wine grape cultivation is due to its surrounding mountain ranges, resulting in low rainfall. Among these, the Northern Alps, which stretch north to south along the border with Gifu Prefecture, consist of mountains around 3000 meters high and act as a barrier blocking moist air and rain clouds coming from the west. The Northern Alps, beloved by climbers and skiers, are also known as the Hida Mountains, named after a flying horse. We named our wine Pegasus Hills out of respect for the Hida Mountains, carefully crafting wine from grapes grown in some of Japan's finest grape-growing regions influenced mainly by the Northern Alps, including Ikeda Town, Azumino, and the area extending to Shiojiri.
The 2024 vintage underwent low-temperature maceration for 5 days before fermentation, followed by fermentation at temperatures above 30°C. The must was stirred 2 to 3 times a day to extract color and flavor. After aging for 6 months in new French oak barrels, it was bottled. It features rich fruit flavors that can be enjoyed early, but with a solid structure that allows it to age for 10 years.
