The 2022 style is a blend of three types of cuvées. In 2022, we challenged various things. This wine was made by fermenting three different cuvées with different raw materials and production methods, including destemming machines, hand destemming, and grape yield restriction (one cluster per new shoot). We performed cold maceration to extract pigments and careful pigeage, and after fermentation, only naturally flowing wine without applying pressure was used. Then, malolactic fermentation was carried out, and the wine was aged in barrels. While regularly checking the taste, the wine was refined in the barrels, then each cuvée was transferred from the barrels to stainless steel tanks, followed by assemblage. Bottled unfiltered. This is a special wine blended with yield-restricted wine.
