This is a red wine made from 100% grapes grown in Tsukuba City, Ibaraki Prefecture. Grapes harvested at Bees Knees Vineyards at the foot of Mt. Tsukuba are contract fermented. The fruit stored at 4°C is destemmed and crushed, then cold macerated and fermented before pressing. Overdrive [2018] is soaked in 1.5g/L oak chips for 4 weeks to add oak flavor.
