Using five varieties of black grapes from Kaminoyama City, Yamagata Prefecture, the wine undergoes early low-temperature fermentation, followed by a slow temperature increase and 30 to 40 days of fermentation to extract rich umami. It is then aged for 13 months in oak barrels, resulting in a mellow and deep flavor.
A dry red wine with depth, characterized by concentrated fruit flavors harmonized with aromas of red fruits, spices, herbs, and toast, fine tannins, and rich acidity.
