At some of the estate vineyards in the Tazawa area of Tōmi City, where Villadest Winery is located, grapes have been grown without synthetic pesticides since 2006. The Merlot harvested from those vineyards is fermented with natural yeast native to the grapes and bottled unfiltered. It is a "natural" style red wine with reduced use of antioxidants.
This wine has a "gentle" character and charm, different in style from the orthodox Vigneron's Reserve.
Barrel aged for about one and a half years.
