93% Merlot from Iga City, Mie Prefecture, 7% Kerner from Yoichi, Hokkaido, natural fermentation, no chaptalization, no added sulfur dioxide
This red wine combines Merlot grown in Iga City, Mie Prefecture by Marukyo Farm in Kawai Town, Nara Prefecture, with Kerner from Yoichi Town, Hokkaido.
Merlot was destemmed and crushed, then fermented at low temperature in a fiber tank. Punch-downs were done by hand about twice a day, and pressing was done while sugars remained. After that, anaerobic fermentation was carried out in a stainless steel tank.
A somewhat wild aroma reminiscent of natural wines from southern France, likely due to anaerobic fermentation after pressing, with volatile acidity and red fruit scents. The acetic acid is at just the right level to provide a pleasant umami taste in the mouth.
We blended a small amount of barrel-aged Kerner with stainless steel tank-aged Kerner, imagining adding Viognier to Syrah.
It has a slight green note and is recommended to be paired with ayu (sweetfish) and the like.
This is a wine that seems likely to create other exceptional pairings.
