I believe the region is shaped by all these pulses. From the only "Koshu" vineyard in Akayu, Yamagata (Nanyo City), the Koshu grapes were destemmed and crushed, then left in skin contact for 48 hours before pressing. Without racking, the wine was fermented in two new French oak barrels (unsulphured), two two-year-old French oak barrels (sulphured for barrel preservation), and the remaining juice was naturally fermented at low temperature in stainless steel tanks. Overall, the balance of oak to stainless steel is 9:1. During and after fermentation in oak, no bâtonnage (stirring) was done to preserve the carbon dioxide from fermentation. Five months after fermentation, the wine was drawn from the barrels and bottled in a lightly cloudy state. This 2022 Akayu Koshu preserves the delicate and fine acidity characteristic of Koshu. The unique soft texture from French oak fermentation and the acidity make it suitable for various food pairings. It can be aged for 5 to 10 years, but its fresh state is also enjoyable. This is the only wine from Yellow Magic Winery that specifies the use of antioxidants, but aside from the sulphuring of the oak barrels, no sulfites are used in this wine.
