Yellow Magic Winery / Heat Beat KOSHU 2023 (White) 750ml
Regular Price ¥3,850In 2017, a new project started in the wine region of Akayu.
This wine is based on the concept of "Bottling the VINEYARD = bottling the vineyard as it is."
The heartbeat of the earth, the heartbeat of the grape growers, the heartbeat of the winemakers, the heartbeat of those introducing this wine, and the heartbeat of those drinking this wine. I believe the region is formed by all these heartbeats.
After destemming and crushing Koshu grapes born from the only "Koshu" vineyard in Akayu, Yamagata (Nanyo City), the juice was left in skin contact for 48 hours before pressing. Without racking, two 2-year French oak barrels (sulfur burned for wood barrel preservation), two 3-year French oak barrels (sulfur burned for wood barrel preservation), and the remaining juice were naturally fermented at low temperature in stainless steel tanks.
Overall, the balance is barrel: stainless steel = 9:1. During and after fermentation in oak, no batonnage (stirring) was done to preserve the carbon dioxide during fermentation. This is to not spoil the delicate and fine acidity characteristic of the 2023 Akayu Koshu.
The soft texture unique to French oak fermentation and the balance with acidity will suit various dining scenes. It can be aged for 5 to 10 years, but I think you can also enjoy its flavor in a fresh state.
This is the only wine from Yellow Magic Winery that explicitly states the use of antioxidants, but aside from the sulfur burning of the oak, no sulfites are used in this wine.
