Using late-harvested Koshu grapes from our own managed vineyard. Concrete tanks were used to evoke the traditional image of "wine," and fermentation was carried out with wild yeast.
After fermentation, it was aged in cocoon-shaped concrete tanks, oak barrels, and stainless steel tanks.
A wine with a vivid orange hue extracted from the grape skins, offering a rich blend of flavors and pleasant astringency that fully brings out the characteristics of the Koshu grape, providing a fresh surprise.
This wine pairs well with slightly bitter ingredients and is perfect for enjoying with rustic, wild-flavored dishes.
