After carefully harvesting and destemming fully ripe Koshu grapes, maceration is used to maximize the natural fruit flavors of the Koshu variety. Following a slow, low-temperature fermentation with wild yeast attached to the grape skins, meticulous batonnage creates a wine with rich aroma and deep flavor.
Hanamizuki Blanc is the third release brewed and bottled at the new winery completed in 2021. Enjoy its unprecedented floral aroma, transparent flavor, mineral notes, and refreshing fruitiness.
