This is Japan's first wine brewed with sake yeast.
Koshu grapes are slowly fermented at low temperatures using sake yeast instead of wine yeast, resulting in a wine with a gentle aroma and a soft taste that pairs well with Japanese cuisine.
It is especially suitable as a table wine because it pairs well with dishes such as rock oysters, chilled tofu, sashimi, and grilled chicken.
