Hand-harvested and immediately destemmed, then naturally fermented. Seyval is macerated for 8 days, Neo Muscat for 3 days, then pressed and blended with directly pressed Delaware. Aged for 2 months with two rackings, unclarified, unfiltered, no SO2 added, and Niagara is added just before bottling.
The color is a clear lemon yellow. It has tropical aromas like grapefruit and pineapple, with a refreshing herbal nuance reminiscent of cinnamon. On the palate, the sweet, nutty flavor of hazelnuts spreads, and the exquisite blend of four grape varieties, with a faint bitterness, adds depth to the taste. It has a light body and a soft mouthfeel, resulting in an elegant wine with a lively balance of acidity and umami.
