This white wine uses grapes planted in 2018 in Tenri City, Nara Prefecture. It is cultivated biologically.
① Monde Brille and ② Sauvignon Blanc + Pinot Gris are pressed separately and kept in stainless steel tanks.
Fermented at a low temperature of 6 degrees. Before fermentation is complete, Monde Brille is transferred to barrels for barrel aging. Before bottling, Monde Brille from the barrels is blended with Sauvignon Blanc and Pinot Gris. The ratio is about 80% Monde Brille, 9% Sauvignon Blanc, 9% Pinot Gris, and 2% others. A slight volatile acidity that can be perceived positively spreads a juicy umami flavor in the mouth. White peach, muscat aroma, refreshing herbal scent, and the aroma of oak barrels without roasting.
