This wine uses Delaware grapes cultivated with grass growing and reduced pesticides by Mr. Onishi, who trained at Katashimo Winery during the same period, in Kashiwara City, Osaka Prefecture.
Long-term fermentation at low temperature in stainless steel for about three months. Lactic fermentation.
The flavor profile is similar to the wine "u" released in 2021; it is smooth yet rich, with aromas of citrus, pear, and lactic fermentation reminiscent of Chelsea yogurt, pairing well with the fat in meat. The volume is slightly smaller than "u".
Although the grapes are from hot Osaka, they are cultivated in mountains with some elevation, so they retain a reasonable acidity and have a good balance.
