I believe that the region is formed by all these pulses. The Koshu born from the only "Koshu" vineyard in Yamagata Akayu (Nanyo City) is pressed after 48 hours of skin contact following destemming and crushing. Without fining, it is aged in 2 new French oak barrels (not sulfur-treated) and 2 two-year-old French oak barrels (sulfur-treated for barrel storage), while the remaining juice undergoes low-temperature natural fermentation in stainless steel tanks. Overall, the balance is 9:1 of barrel to stainless steel. During and after fermentation in oak, no batonnage (stirring) was done to retain the carbon dioxide during fermentation. Five months after fermentation, the wine was drawn from the barrels and bottled in a slightly cloudy state. Care was taken not to compromise the delicate and fine acidity characteristic of the 2022 Akayu Koshu. The soft texture unique to French oak fermentation and the acidity will pair well with various dishes. It can be aged for 5 to 10 years, but I believe its flavor can also be enjoyed in its fresh state. The Yellow Magic Winery is the only winery that specifies the use of preservatives, but this wine does not use any sulfites except for the sulfur treatment of the oak.
