This wine was made at the perfect timing when the Delaware grapes inherited from his father turned a ripe pink color. He has been fascinated by the acidity of blue Delaware for some time, creating various wines with different acidity levels from the blue Delaware in Yamagata Okitama, and has been exploring the category of "blue Delaware." However, he realized that the timing when the grapes turned pink, rather than blue, possesses a pleasant balance of acidity and fruitiness, prompting him to pause his exploration of "blue Delaware" and shift to exploring "pink Delaware." From this pink Delaware category, he hopes to focus on "Japonese." This wine underwent a slow lactic fermentation over four months after pressing, resulting in a flavor that combines lactic notes with a pleasant acidity and umami. While it may be said to be essential for acidity enthusiasts, please enjoy the deliciousness harvested at the exquisite timing of pink.
