Yellow Magic Winery / R&B 2023 (White Sparkling) 750ml
Regular Price ¥2,970This is a fusion wine made from Fuji apples produced in Nanyo City, Yamagata Prefecture, and Pink Delaware grapes (which have started to show a bit of color compared to Blue Delaware). In other words, it is 'Rhythm and Blues, and Apple and Grape.'
The apple juice obtained by slowly pressing with an apple juicer was fermented at low temperatures for 3 months without any clarification, and at the end, pink Dela wine made from fermented oranges, which was preserved with no sulfites, was added and underwent secondary fermentation in the bottle.
The characteristic of the apple's ripe deep yellow and the color wrapped in brewing orange, which is also without sulfites, is prominent.
The flavor has a unique apple essence characteristic of cider, and the finesse of the acidity from the "Pink Dela" that comes from its moderation makes it easy to pair with various dishes.
The carbonation is moderate, but the finely dissolved bubbles enhance the apple flavor more strongly after the second glass. It conveys the deliciousness of "Pink Dela" that keeps you from getting tired of drinking until the very end.
This fusion wine of "apple" and "grape" is something I wanted to create because I came to Yamagata Prefecture, the production area of "apple (3rd in the country)" and "apple (3rd in the country)".
I have continued to think that if grape wine compensates for the shortcomings of "apples," which have a low alcohol content and are difficult to express acidity, it could become a more enjoyable wine.
Please enjoy the "smooth throat-feel rhythm" and the "delicious shout from the heart" as the name "R&B" suggests.
