The "Friends (T), Edamatsu (E), Furuchi (F), collectively known as (TEF)" trio, who stood up to protect the abandoned vineyard in the Honzawa area of Yamagata City, created a pink Dela (which has a more advanced coloration than the blue Dela, achieving an interesting balance of sweetness and acidity) that underwent secondary fermentation in the bottle. I believe the crisp acidity and the umami of the orange create a delightful flavor. In particular, the pink Dela was fermented for a full 60 days. When poured from the bottle into a glass, fine carbon dioxide from lactic acid fermentation is fragrant. This is not just a "blue Dela" as a simply sour wine, but an exploration of the interesting characteristics of a new cultivation category called "pink Dela." Please enjoy this casual orange sparkling wine born from their grapes.
