Using Sauvignon Blanc from our own vineyard, we aimed to create a gentle nuance that seeps into the body by layering the green and floral characteristics of this variety with the richness from the skins and the lightness of sandy soil.
The brewing method involves maceration at extremely low temperatures for 72 hours, pressing, juice clarification, and fermentation in wooden barrels. Aging is also done in wooden barrels, and it was bottled in early spring.
Unlike orange wine that is brewed for a long time, this method retains the varietal characteristics while creating distinctive flavors on top.
The top notes are tropical fruits such as pear, lychee, and pineapple. Beneath that, you can sense the greenness of Sauvignon Blanc.
The mouthfeel is soft and gradually transforms into a thick liquid over time.
The faint coconut from the barrels and the nuances of tropical fruits somehow evoke the taste of beaches and the sea for me.
