Regular Price ¥4,180Using sandy Cabernet Sauvignon from our own vineyard, we aimed to create a charming yet somewhat mysterious wine with a gentle flavor that seeps into the body.
There are four brewing methods: whole cluster, carbonic maceration, cold maceration, and a special process that activates lactic acid bacteria before fermentation. Each method was fermented in separate tanks and combined during pressing.
The extreme heat and drought of 2023 have brought wonderful flavors to red wine varieties.
Seeing grapes that are healthier, smaller, and more concentrated than I've ever seen before, I couldn't help but want to make them to my liking, so I ended up creating 【くま】 after a long time.
It actively generates substances known as off-flavors, which is exciting, but for those who love it, the taste is irresistible.
The nuance of MC, the blue of the whole room, the black of reduction, the brilliance of acetic acid, the faint sensuality of Brett, and the characteristics derived from the variety. Various elements intertwine and spread from the glass to the palate. And the aftertaste gradually expands.
I naturally love all the wines I make, but seeing 【くま】 again after a long time since the last one in 2020 truly excites me.
