The goal of Mogura is to create a wine that spreads smoothly in the mouth and seeps into the body. 2022 was a year of rain, rain, and more rain. Nevertheless, strangely, our Chardonnay had almost no diseases, and we were able to harvest healthy grapes. After cooling, we destemmed and crushed the grapes, then performed maceration overnight. For fermentation, we chose natural yeast for the first time in a while. It took about three days for pre-culturing. Although we were enthusiastic, the fermentation did not progress well, and in the end, we finally consumed all the sugars in August 2023.
The finished wine has a vibrant acidity that feels like rain, with a hint of acetic acid mixed in. There is a thickness from the skins and a body from the barrel that combine to create a flavor I really enjoy. The acetic acid, which felt a bit prominent right after opening, settled down and transformed into a rich flavor by the third day. It seems like it will take a little more time for all the elements to come together right after opening, but I expect that in a few years, it will become a completely different liquid from what it is now.
The natural yeast mole that I tried for the first time in several years taught me many things. Taking this opportunity, I changed all of the 2023VT animal series to natural yeast.
