Made with 100% Yamagata grapes.
Brewed in three amphorae and blended in the summer of 2022. The first was direct-pressed and fermented with Delaware and Chardonnay. The second was pressed after 24 hours of skin contact with Niagara and Rosario Bianco, and fermented. The third was fermented whole bunch for 7 days with Niagara and Neo Muscat. All grapes were fermented in amphorae and bottled after approximately 8 months of aging in amphorae. All fermented spontaneously with wild yeast. No fining, no filtration, and no additives such as sulfites.
The refreshing aroma of Muscat feels invigorating, and the taste has a fruity finish with hints of green apple and young pear, complemented by the mellow sweet and sourness of the fruit from amphora aging.
