All grapes used are produced in Kamiyama City, Yamagata Prefecture.
The Cabernet Sauvignon was fully destemmed and divided into two containers: a fiber tank and an amphora, with a 20-day skin fermentation. After pressing, the wine from the fiber tank underwent approximately 9 months of aging in stainless steel tanks, while the wine from the amphora fermentation was aged directly in the amphora. In the summer of 2022, the wines from the two tanks were blended and bottled. All fermentation was spontaneous using wild yeasts. No fining, no filtration, and no additives such as sulfites were used.
