Using Delaware and Shine Muscat grapes from our own farm in Nanyo City, Yamagata Prefecture. The grapes are organically grown without the use of pesticides other than Bordeaux mixture, and without fertilizers or compost. During harvest, the grapes are carefully sorted and all stems are removed. After 9-14 days of skin fermentation in amphorae, they are pressed. The wine is then returned to amphorae and bottled after approximately 10 months of aging. Fermented with wild yeast, unclarified, unfiltered, and no added preservatives.
The aroma combines the characteristics of mandarin peel and lemongrass with the distinctive candy scent of table grapes. The taste is fresh, with a well-balanced blend of the sweet and sour notes of table grapes and tannins derived from maceration. A soft and juicy grape flavor lingers in the aftertaste, but is mixed with a bitter tannin.
