Using carefully selected Koshu from our vineyard in Katsunuma, we ferment the juice with the skins and seeds in the tank just like red wine, without adding preservatives, using wild yeast, and age it unfiltered in French oak barrels.
In the Tanashitate field of the Shimo-Iwasaki and Todoroki-Hikawa area, no pesticides are used, and pests are removed manually.
Managed with only lime sulfur and Bordeaux mixture as pesticides. The fermentation temperature is left to nature, fermenting for 11 days, then pressed, and aged for about 11 months in French oak barrels and stainless steel tanks.
