Using carefully selected 100% Koshu from our vineyard in Katsunuma, we fermented the juice together with the skins and seeds in the tank, just like red wine, without adding preservatives, using wild yeast, and finished it unfiltered.
In the Tanashitate fields of the Shimo-Iwasaki and Todoroki-Hikawa area, pest control was managed using only lime sulfur mixture and Bordeaux mixture without the use of insecticides. Chemical fertilizers and chemical pesticides were not used, and pest removal was done manually.
The temperature during fermentation is left to nature, and after 12 days of maceration, it is pressed. It was aged in stainless steel tanks for 6 months.
