Using 100% Koshu from the farm in Katsunuma, we fermented the juice with the skins and seeds in the tank just like red wine, without adding preservatives, using wild yeast, and finished it unfiltered.
Harvesting in our Shimo-Iwasaki and Todoroki-Hikkawa areas, as well as in the Hishiyama and Toriihira hills, and in the棚仕立て fields of Katsunuma town. The fermentation temperature is left to nature, and after 12 days of maceration, the juice is pressed.
Aged for 6 months in a stainless steel tank.
