About brewing: selection of grapes, 90% destemming, after crushing, placed into stainless steel tanks for about 2 weeks of maceration, fermented with wild yeast.
After extracting using the Senier method, a fermentation period of a total of 4 weeks at a low temperature of 14℃ to 16℃.
Additives such as enzyme agents, fermentation-promoting agents, and antioxidants are not used.
