Using the outdoor cultivated seedless Delaware grapes from the Kubo-te district of Yamagata Prefecture, we conducted an initial low-temperature fermentation, gradually raising the temperature over 17 days to extract rich flavors. After that, we aged it in old barrels for 6 months, resulting in a smooth and deep flavor.
This is a dry orange wine characterized by a soft acidity and pleasant astringency, harmonizing the vibrant aromas of pineapple, apricot, and honey with a hint of spice.
