Using Muscat Bailey A from the Uramachi district of Kaminoyama City, Yamagata Prefecture, after destemming and crushing, cold maceration (low-temperature soaking) was performed while gradually raising the temperature to slowly proceed with fermentation. After fermentation was complete, the mash was continued for a certain period to extract umami. (Maceration period: 16 days, with malolactic fermentation) This is a dry red wine with a gorgeous berry aroma and rich fruit flavor, balanced well with gentle tannins and fresh acidity.
