We use Koshuh varieties from contracted farmers in Yamanashi Prefecture. We aimed to create a soft-textured wine that brings out the flavor of the pink skin of the Koshuh variety. The grapes are crushed and left in contact with the skins for four days for fermentation, with daily liquid circulation, and pressed on the fifth day. It has a taste that evokes the gentle roundness of spring with the slight bitterness of pomelo skin. No added preservatives (sulfites).
