We use Koshu grapes cultivated in our own fields in the Kubohira area of Makioka Town, grown without Bordeaux mixture.
Contacted with the fruit peel, we extracted the umami flavor characteristic of the Koshu variety's purplish-pink color.
To enhance the aroma, fermentation is carried out without the use of sulfites, promoting the enzymatic activity of yeast.
The rounded citrus aroma reminiscent of pink grapefruit spreads endlessly. No added preservatives (sulfites).
