The grapes produced by Yosuke Akiba, a grape producer, are delicate yet robust, and I feel that his personality shines through in them. The highly praised "San" from 22vt has also been finished with 100% Seyval 9110 in 23. At the end of August, while the weather in Kamiyama is still hot, everyone helping out, including Akiba-san, is sweating and having fun during the harvest. The juicy flavors reminiscent of Japanese pears and hassaku citrus spread out, bringing out the inherent qualities of the grapes with a refreshing acidity and a moderate taste, while a subtly sweet aroma also wafts through the glass.
On the day of harvest, we perform direct pressing, extracting the aromatic fragrance of the grapes through 9 days of low-temperature fermentation, and by employing the sur lie method in open tanks for 40 days, we maximize the umami inherent in the grapes.
Chill well, and it's of course delicious to drink as is, but when poured over cut fruits, it offers a refreshing and tropical flavor. Its light taste makes it easy to drink even for those trying it for the first time; it's a lightly sparkling wine.
