We are challenging fermentation with wild yeast. Using Delaware grapes from Yamagata Prefecture, we perform maceration fermentation by soaking the grapes with their skins in the same method as red wine, resulting in an orange wine that extracts color from the skins. It has sweet aromas of dried apricot and osmanthus, along with a sweetness reminiscent of persimmons and moderate astringency. This is a table wine that pairs well with a wide range of meals, especially Japanese cuisine.
