The aroma of ripe apples, European pears, and quince, along with floral notes (orange blossom, linden tea, Western hawthorn, honeysuckle, white roses), herbs (anise, sage), lemon and orange peels, hints of nuts and smoked almonds, and nuances of acacia honey blend together. The attack presents a beautiful impression of fruitiness reminiscent of apples and citrus, elegant and creamy, with a pleasant mouthfeel of fine bubbles. The alcohol sensation is moderate. The umami impression is high, with a lingering citrus-like acidity. There is a gentle saltiness reminiscent of brioche and a transparency of mineral aftertaste. This is a dry sparkling wine that can be paired with a variety of foods.
