Produced in Kashiwara City, Osaka Prefecture, 100% Delaware, naturally fermented, no added sugar, no added sulfur dioxide.
This wine is made using Delaware grapes cultivated with grass cultivation and reduced pesticides in Kashiwara City, Osaka Prefecture, by Mr. Onishi, who was undergoing training at Katashimo Winery at the same time.
Long-term fermentation for about 3 months at low temperature in stainless steel. Lactic acid fermentation.
It has a flavor profile similar to the wine "u" released in 2021, with a smooth yet rich taste, aromas of citrus, pear, and lactic fermentation reminiscent of Chelsea yogurt, which pairs well with the fat of meat. The volume is slightly smaller than that of "u."
The grapes from hot Osaka are cultivated in a mountainous area with some elevation, which allows them to retain a certain level of acidity, resulting in a good balance.
