An amber wine primarily made from Shine Muscat, which has been part of the lineup since last year.
Using 2 types of aromatic grapes. The Shine Muscat was fermented by lightly crushing whole bunches, and then more whole bunches of Shine were laid on top to slowly ferment for about 2 weeks. The Shine Muscat, which is difficult to crush, was not punched down but instead the grapes were crushed by hand and incorporated into the mash.
Although it is cultivated with seeds, there are many seedless grains due to mutations, so we aim to create a full-bodied wine by pressing it strongly to impart a gentle astringency and bitterness.
It is a wine that belongs to orange wine and amber wine, but the color is a light hue close to yellow.
"Chachapel is a coined term that combines 'Chacha' meaning the mash of all rooms in Chacha=Georgia, and 'Pale' meaning pale."
