"I had the opportunity to purchase Pinot Noir from Mr. Saiichi Endo in Yamagata City."
The wonderfully harvested grapes, which were very beautiful, had about 10% less juice due to the scorching heat, but the skins were thick and the seeds were fully ripe. It would be a waste to produce such wonderful grapes normally, so I expressed not only the tannins from the skins but also the tannins from the seeds through a long two-month maceration.
It already has a sense of maturity, with colors and flavors that suggest it has been aged for several years.
This is a variety that I don't know when I will be able to share it in the future. I would be happy if you could enjoy it thinking of it as a once-in-a-lifetime encounter.
